Manna is a product that comes from Castelbuono and Pollina, within the Madonie Park in Sicily. It is the resin of a particular species of ash that is collected with the help of sturdy cotton threads that are knotted where the cuts insist that the maniculturists make to cause it to come out. In the kitchen it is used as natural sugar, also useful in case of constipation. In biocosmetics it is used for its constituent properties for the dermis, nutrients and emollients.

Giulio Gelardi was born in Pollina in 1950 and is one of the last mannicoltori. In the mid-1980s he decided to follow in his parents' footsteps in the production of manna, however, revolutionizing the harvesting technique which until then was limited to collecting the manna that came out of the cut of the ash tree on its bark, also incorporating its impurities. Ensuring a thread corresponding to the cut and thus allowing the formation of the so-called "cannoli" of mana, ensuring the extraction of a pure manna and completely free of residues and impurities.
