Manna is a product that comes from Castelbuono and Pollina, within the Madonie Park in Sicily. It is the resin of a particular species of ash tree that is harvested using sturdy cotton threads that are knotted where the cuts insisted on by the manna-makers to cause it to spill out. In cooking it is used as a natural sugar, also useful in cases of constipation. In biocosmetics it is used for its dermal constituent, nourishing and emollient properties.
