Casearia company located in the heart of the Madonie park, between the heights of Geraci Siculo and Gangi, where pastures still follow one another mixed with olive groves, almond groves and vineyards.
One hundred and fifty cattle, mostly of the Italian brown and red spotted breeds, of which 120 for dairy and the remainder for meat, 110 hectares of land and about 3,500 liters of milk per day for making cheese. The flagship product of the Barrecas is the Madonie provola, a Slow Food presidium, a stretched curd cheese produced from whole raw milk with small quantities of sheep's and goat's milk, rennet and salt. It has the characteristic pear shape, with a short neck and rounded head and a thin straw yellow crust which, with ageing, tends to amber yellow and is also offered in smoked versions or with red pepper, black pepper and pistachio.
