Trottole format pasta produced by hand in Resuttano, an agricultural center in the uncontaminated hinterland of Sicily. The mixing water from the Madonie Natural Park preserves all the organoleptic properties of the semolina. Consistent pasta, which holds up to cooking flawlessly, with a roughness that goes well with sauces and condiments.

Sicily boasts as many as 52 species of indigenous grains also referred to as "ancient grains" and which guarantee excellent quality and properties. Sicilian ancient wheat varieties are very hardy, have a more robust root system that coexists well with weeds and uses the soil efficiently. Studies have determined that Sicilian grains would contain a higher percentage of lignans, substances of natural origin found in grains and some vegetables that help us maintain a healthy heart, boost immunity and fight some forms of cancer. Using ancient grains for food means using grains that are generally organic, because they are produced by small businesses that control the supply chain meticulously and produce niche, quality products. They are also grains that contain a very low gluten content, thus suitable for everyone.
