Pistachio is a plant native to the Mediterranean basin, it was brought to Sicily by the Arabs, when they took it from the Byzantines and since then its trees have found a perfect habitat in the territory. In Italy the pistachio grows mainly in Bronte and in the provinces of Agrigento and Caltanissetta. The pistachio harvest is biennial and takes place between the end of August and the beginning of September. The fruits are then hulled and dried by the producer himself, who still sells them in the shell to exporting companies or cooperatives. The Bronte Dop pistachio is characterized by an intense green color and for this reason it is also called "green gold". Its flavor is sweet, delicate and aromatic. Pistachios are rich in vitamins and minerals and the presence of monosaturated fats helps regulate the amount of cholesterol in the blood. There is no lack of isoflavones, lutein and polyphenols and, moreover, they have antioxidant properties. With pistachios you can really indulge yourself in the kitchen. Traditionally, they are an excellent ingredient for the preparation of desserts and ice creams, but they are also perfect for flavoring cured meats, in particular mortadella and salami.
