Nero d’Avola Sinubiìo DOC: The Essence of Western Sicily
Nero d’Avola Sinubiìo is a wine with a Controlled Designation of Origin (DOC) that expresses the authentic character of Sicily, born in the sandy soils of the Sinubio area near Marsala. This unique terroir, combined with the artisanal passion of the Mannone family, gives a wine of great structure and elegance.
Tasting Notes
Color: A captivating ruby red of moderate intensity.
Aroma: The bouquet is complex and seductive: fruity and spicy notes dominate, wrapped in elegant hints of ripe red fruit, vanilla and black pepper.
Taste: On the palate it is full, enveloping and pleasantly tannic, with a persistent finish that enhances its gastronomic vocation.
Artisanal Production Process
Artisanal care is at the heart of the Mannone philosophy. The Nero d’Avola grapes are hand-harvested, placed in crates and immediately refrigerated to preserve their aromatic integrity. After destemming, the winemaking process includes:
Fermentation: Five days in steel.
Maceration: Three weeks to extract color and noble tannins.
Aging: Nine months in French oak barriques, which lend complexity and spicy notes.
Bottle maturation: A further two months in the bottle before release.
Recommended Pairings
Perfect with structured dishes such as grilled or roasted red meats and game. Served slightly cooler, it also magnificently enhances important seafood dishes such as red tuna prepared in various ways.
