Pacènzia Zibibbo Late Harvest IGT: The Nectar of the Sicilian Sun
Pacènzia (Patience) is a sweet, aromatic passito white wine that captures the essence of Sicily and the philosophy of Tenute Orestiadi. It comes from the native Zibibbo grape variety grown in the fertile black clay soils of the Belìce Valley, in Gibellina. Its name celebrates the Sicilian virtue of knowing how to wait, allowing the warm sun and slow passage of time to shape the finest grapes into a treasure of aromas and sweetness.
Tasting Notes
Color: A majestic, intense golden yellow, a prelude to its richness.
Aroma: The bouquet is heady and elegant, dominated by intense notes of candied citrus, honey and enveloping hints of ripe fruit.
Taste: Moderately sweet, with a soft, harmonious texture that finds a perfect balance between sweetness and vibrant freshness.
Winemaking and Aging
The secret of its concentration lies in the late harvest, during which the grapes undergo a natural drying process on the vine. This is followed by destemming, cold maceration to extract maximum aroma, and temperature-controlled fermentation, which is then naturally halted by the cold to preserve residual sweetness and primary aromas.
Pairings and Serving
This Zibibbo is extremely versatile: it pairs beautifully with dry pastries and fruit-based desserts, and offers a surprising, refined contrast with blue cheeses or medium-aged cheeses. Serve at 10–12°C. It has excellent aging potential, able to evolve in the bottle for 5-10 years.
Tenute Orestiadi: Myth, Art and Wine
Founded in 2008 in Gibellina, Tenute Orestiadi takes its name from Greek myth and the cultural hub born after the 1968 earthquake. With 140 hectares and under the guidance of winemaker Giuseppe Clementi, the winery blends ancient winemaking tradition with contemporary art, creating wines that are authentic expressions of the dialogue between man, myth and land.
