Description
Mamertino Bianco DOC by Principi di Mola is a wine that unites history and territory in an elegant expression of Sicilian viticulture. Made from Catarratto, Grillo and Inzolia grapes grown counter-espalier on medium-textured clay soils at 400–500 meters above sea level, it represents a refined example of balance between freshness, savoriness and aromatic complexity.
Fermentation takes place in stainless steel at controlled temperature (14–16°C) for 15–20 days, followed by aging of 6 months in steel and 2 months in bottle, to preserve the varietal fragrance and finesse of the bouquet.
To the eye, it presents a light straw yellow with greenish highlights. On the nose, it opens with floral notes of orange blossom, jasmine and broom, followed by fruity hints of citrus, yellow-fleshed fruit and fresh almond. The aromatic profile is completed by nuances of cut grass and a light mineral note, typical of Sicily’s hilly terrain.
On the palate it is fresh, round and pleasantly savory, with excellent acidity that enhances its drinkability and a medium-long persistence. A harmonious, sun-kissed wine, ideal to accompany seafood dishes, shellfish, fish crudo and fresh cheeses.
Its roots run deep in history: already appreciated by Roman patricians and mentioned by Julius Caesar in “De Bello Gallico,” Mamertino was considered a wine worthy of the emperors’ table. Today, Principi di Mola renews this legend, offering a modern, refined version of this legendary Sicilian wine.
