Description
The Maqaràt Passito from Tenuta San Giaime is a “heroic” wine born in the isolated, wild heart of the Alte Madonie, a unique territory where organic Moscato grapes ripen inland until they reach a golden color. The name recalls one of the earliest settlements of old Gangi, testifying to a strong bond with the past.
The Roots and the “Sixth Blue Zone”
Thanks to unique soil and climate conditions and the choice to grow without herbicides, fertilizers or chemical treatments, the Alte Madonie stand out as a healthy territory that passes on excellent qualities to its products. The unspoiled environment, with free-roaming bees and pastures, has led some to hypothesize that this area could be the planet’s “Sixth Blue Zone,” joining the prestigious club of the world’s longest-living regions.
Meticulous Production Process
The grapes for Maqaràt come from the small Part. 193 vineyard, at 850 meters above sea level, on clay soil rich in minerals.
Drying: Takes place on racks in a naturally ventilated environment to concentrate sugars and aromas.
Fermentation and Aging: After gentle pressing, the must ferments and ages in steel for about 12 months, following an exclusively organic regime.
Tasting Notes and Pairings
On the nose: Elegant, with notes of candied fruit and the aromatic character typical of the Alte Madonie.
On the palate: Sweet, enveloping, long and velvety.
Pairings: Excellent at the end of a meal with blue cheeses, dry pastries, fresh ricotta and dark chocolate. Also perfect on its own for a moment of relaxation and meditation.
